A nameserver is the server that keeps track of a domain's DNS records and answers lookups about where the domain points. It forms the link between the domain name and the hosting the site runs on. Changing nameservers moves control of the domain's DNS to a different provider.
When a domain is moved to a new provider, the nameservers are repointed, after which all DNS is managed at the new location.
